- Direct Proofing
- Controlled proofing (24h and 48h with elaborated or frozen dough)
- Continuous proofing (up to 24 hours) with processed doughs
- Programmed delayed proofing
Phases of controlled proofing:
Pre-cooling of the retarder prover > Blocking > Maintenance > Proofing > Sleeping
Additionally, the snooze function enables postponing cooking for up to 3 hours at the end of the fermentation process.
