    Air from the production room or chilling room of 0 to 4°C flows through the boxes in consistent horizontal streams. There are only 5 to 6cm between the airstream and the centre of the meat pieces. In freestanding pallets, the centre of the meat is 40 to 60cm from the airstream.

Defrosting & Tempering

For the very fast and consistent tempering of meat in boxes, Interfood supplies and supports PTT machines from TVI. Suitable for any type of tempering, PTT’s automatic operation together with its high capacity substantially reduce labour costs. The units use less energy during chilling and release cold energy during thawing. No extra thermal energy is conducted during warm-up.

Air is drawn from the chilling/production room through the boxes in horizontal streams by a strong fan. As a result of the low-pressure, the awnings of the machine attach themselves to the boxes. Boxes are brought to the ideal temperature in the shortest amount of time - and the temperature at the centre of the boxes equals that at the edge. With a sensor automatically controlling the temperature, this produces fast, exact tempering at minus 2°C throughout the unit - with no loss of fluid, the whole process taking as little as 1-12 hours. (Freestanding pallets take 2-3 days and result in lots of liquid loss at the surface.)

PTT units are very space efficient - accommodating pallets with up to 14 layers of E1 boxes or up to 9 layers of E2 boxes depending on the model. Two to four pallets can be positioned one behind the other and any number of PTT modules can be arranged next to each other in the chilling/production room.
